Roughly chop the salted peanuts in a food processor. Heat the oil in a medium saucepan and cook the onions until softened, about 5 minutes. Stir in the curry powder and cook for 1 minute. Stir in the chopped salted peanuts, the apple juice, lemon juice, sugar, salt and pepper. Bring to a boil. Reduce heat and simmer for 10 minutes. Transfer the sauce to the food processor and puree. Sprinkle the unsalted peanuts over the top before serving.
